Easy Keto ‘Oatmeal’ recipe with Raspberries

This easy Keto “oatmeal’ recipe with raspberries is a lifesaver if you’re over eggs or missing cereal on your Keto journey. If there was anything I missed when I started Keto, it was definitely cereal.
It feels like oatmeal to eat, and it’s packed with great nutrient-rich ingredients. Most importantly it’s pretty delicious.

Until this recipe, chia seeds weren’t something I’d used often. Despite their small size, chia seeds are full of important nutrients. They are an excellent source of omega-3 fatty acids, packed with antioxidants, and they provide fiber, iron, and calcium. Omega-3 fatty acids help raise HDL cholesterol, the “good” cholesterol that protects against heart attack and stroke.

This is a variation on plenty of recipes floating around the web, this one is based on what was in my cupboard the first time I tried to make it and it was such a winner I’ve been using it ever since.

Easy Keto ‘Oatmeal’ with Raspberries

1 Serve

Fat: 42.3g
Carbs: 21.4g  or 6.4 net carbs
Protein 9.2g


  • 2 tablespoons of Chia Seeds
  • 25g desiccated coconut
  • 2 tablespoons of chopped walnuts
  • 30ml cream
  • 1 teaspoon of vanilla essence
  • 1 teaspoon of Stevia
  • 1/2 cup of water (I prefer mine hot so add boiling water)
  • 33g frozen raspberries.

Throw the chopped walnuts and coconut into a pan on low heat, and toast for a couple of minutes.

Put all the dry ingredients in a bowl and mix.

Add the cream and water and stir well. Let the bowl sit for 5 minutes if the water was hot, or 10 minutes if cold.

Stir in the raspberries.  I just use frozen raspberries and give it another 30 seconds in the microwave to rewarm.
